Better Food

By Georgette Pauls Are you starving? Before you say “No”, think and read on. Do you ever wonder WHY you have food cravings and overeat? We all love to eat. But how much of what we eat is really worth eating? How much is being over weight compromising your health? Fat kills. So does poor nutrition. Country kids used to eat constantly, but few were fat. The wild plums might be ready to eat, requiring a trip down the gravel road to where they grew. Everyone would gather and eat straight from the tree. Finally they would fill a bucket to take back to the kitchen. When blackberries came in they would pick them and get covered with chigger bites in the process. Eggs had to be gathered. Chickens were plucked before church on Sunday and fried after, often in lard. The garden had to be picked, and, yes everyone had a garden. You see the difference? Everyone worked really hard for the bounty of food. But the difference was that it was so fresh that few modern people have ever experienced the goodness. You wont find a truly good SC peach or GA pecan in most grocery stores. A good peach is too soft and sweet to be shipped. The ones you get from the grocery are a hard, truck-ripened variety that ships better, NOT the real thing. A lot of GA pecans are eaten right in GA, leaving the rest of us without their exquisite flavor. Any chicken that has yellow tinted skin IS NOT FRESH. The flavor will be off. Corn gathered from the garden twenty minutes before its served is very different from what the grocer has. Do you like fish? Maybe you would if it was fresh. Farmed fish is a poor compromise. Its very likely that Mad Cow Disease is caused by animal based feed. Cows are supposed to eat grass. Some accountant thought it was a good idea to feed cows, COWS (!?). Dumb idea for the sake of profit. Additionally theyre fed hormones for bigger, fatter cows. The hormones make us, you and I, fatter, too. Ever wonder why some young boys have breasts? Look to those hormones. Then there are the antibiotics. They cause more problems than they prevent. No organic farmer would do any of it. The kicker is that much of the food we consume is not only old and flavorless, it also lacks nutrients. Organic farmers in my area tell me that just six hours after a fruit or vegetable is picked 50% of the vitamins and dietary enzymes ARE GONE! If a food has been irradiated to kill germs, ALL vitamins and enzymes are gone. It will fill your belly, but thats the only benefit youll get from it. Why bother? Each incident of travel, canning, freezing and cooking reduces nutrients in food. Even minerals leach out in cooking and canning. No wonder we have uncontrollable cravings! We really ARE STARVING! So how do you insure that you and your family gets good nutrition from food they eat? There are three effective strategies for good nutrition. 1. Grow some of your own food. A few herbs make an easy starting point and require little room and no fertilizer. They can grow on a sunny windowsill. Some, like chives can grow for years with an occasional period of dormancy. Other annuals like basil, need to be planted every few months to insure a dependable supply. These plants add both nutrients and incredible flavor to our diets. 2. Contact your local agricultural county extension office to find local organic farmers. Some will let you do your own picking. Its good exercise and a fun family activity. Each season of the year, even winter has special treats and flavors. Lettuce is a cool weather crop. Asparagus spears peek out in the spring. Tomatoes like summer heat. Root vegetables sweeten after frost. 3. Garden a little. Its good exercise, but the big payoff is the food. Start small and expand your interest and knowledge. The health benefits of better nutrition are incalculable. If you are not starving for nutrients, you will feel more satisfied with less food if it has good nutrition. Losing weight, alone, could give you a better quality of life and reduce your need for expensive medications. But the best part is great food! How BIG is Your Marketing Budget?

By Bette Daoust, Ph.D. Lets face it, most of us do not want to spend a lot of money on marketing. Consultants typically would rather make an attack on a front that does not cost much. Although there are many ways that this can be done, it should only be a part of the arsenal used. So how much should be spent? Spending really depends on how much money is earned from a consulting gig. If a typical engagement brings $5,000 and it takes 2 to 3 weeks to gain the contract, then spending over $500 would be belt tightening. However, if your marketing plan is to use that money for being in the right place at the right time, then it will be well spend and likely get you another project to work on. As a consultant you will spend time on researching where to go in order to make sure you are in the right place at the right time. The $500 will be used for entrance to the event, buying food or drink for your target client, follow-up materials for the contacts you make, and subsequent travel, materials, and phone calls. Research, however, is the key to making this expenditure fruitful. Without the research, you could attend many events and never get anywhere or close to obtaining a contract. So what needs to happen when doing research? First, make sure you know the profile of the ideal client. That means every detail that is relevant to obtaining the contract. Make notes on the size of the organization, the typical entry point that is successful for you, the size of the budget they need to have for your services, the types of problems that are normal for this type of company, who is responsible for solving the problem, who makes the decisions, who approves the funding, how the process for payment works, how long it takes to become a vendor, where you can run into the ideal contact, plus anything else that ties into your expertise. Second, create a process for getting your research completed. This means, decide where you will get the information newspapers, Dun & Bradstreet, Google, and any other place that will give you good accurate information. Also find out if anyone you know has a contact within that organization. This can be a good starting point for up-to-date projects. Also, when scanning newspapers or online sources, look to see what jobs they are trying to fill. This sometimes gives you a good clue as to new projects. Last, armed with the research, you can begin to execute your marketing plan with knowledge rather than just hope. Call the right people, or at least attend an event where you can meet the ideal contact. Start the action steps from the plan and if you need help, hire someone or use a professional. The money will be well spent. Just remember that great things happen one step at a time, do not put all your efforts into one company, do at least ten at a time. If you connect with only one or two people a day then you will have contacted 40 each month for a total of 480 for the year. Out of that many connections, at least 5% (24) will become a project as long as the contacts are the ones that need the services you are offering. By Lee Dobbins Looking after a garden is a year round job for some. If you get a brief break because there is snow on the ground, then there maybe some things you might want to research before Spring. Spring isn’t the only nor always the best time to do prep work. If you need to re-seed patches where the lawn looks bare, just before the snow comes is a good time of the year to start. The seeds will get worked into the soil as the snow falls and lay dormant during the winter months. Once spring and the first melt arrive then the seeds will be in good mud and the early stages of germination will begin. Once they start getting the sun then good, fresh grass should follown in a couple of weeks. Crabgrass and its relatives don’t thrive in the Fall or Winter and this means that you have a head start on that kind of weed control. As the new lawn grass starts to spread, it has a good chance of stopping the crabgrass, and with any luck it wont develop at all. Start applying the Spring fertilizer at the earliest possible time. This will help give the young shoots a good start and, if you use fertilizer that also controls weeds, you may solve two problems in one go. As that snow continues to melt off there will be areas where the grass has become thatched this is a condition in which the blades get lain over one another, then compressed from the snow pack on top. Some of these may die over the winter and this can leave you with a kind of straw-like covering, hence the name ‘thatch’. Doing something about this is easy. Just cut the grass a little later in Fall than you need to so that the length is controlled. This restricts the height and helps keep thatching to a minimum. In Spring give the grass a good raking. Of course, if you raked in the Fall, there won’t be any leaves to get rid of but the extra raking helps pull up thatched areas and allows air to get to the soil. If the ground has become hard, or the soil is easily compacted, you can follow that up with an aeration. This can be done either by using a special attachment on a riding lawnmower and running it over the grass, or using special large-drum rollers with spikes poking out. An inexpensive way is to use special shoes which are like golf shoes with spikes on the bottom. You just put them on then walk around the area you want to aerate. The tiny holes made by the shoes allow air to penetrate the soil more easily. At the same time, it makes channels for solid fertilizer pellets to fall into. After de-thatching and aerating, your lawn will be ready for you to carry out any weed control and to start seeding, fertilizer application and regular mowing.
